A Rainbow and Pot of Gold

I am always looking for new holiday traditions to start with my children. This year for St. Patrick's Day the "Lucky Leprechaun" left rainbow parfaits and a "pot of gold" for my children this morning. The parfaits were really just cut up strawberries, cantaloupe, peaches, honey dew, and grapes-with vanilla yogurt to top it off. This made for a healthy breakfast, (minus the Rolo's they managed to sneak:) and a fun tradition we will continue next year.
If you have really adventurous children- who will eat green peppers- you can try this idea. My 4-year-old loves green peppers, so I will be making these cute little shamrocks for dinner.
If you live here in NYC, St. Patrick's Cathedral would be a fun place to visit today. The architecture is stunning, and your little ones can hunt for shamrocks- which are carved into everything in this beautiful building.

Yum! I wish I were your kid for St. Patrick's Day... I think I'll have to take this on as my own tradition. Very cute.

You are so creative! I like the green pepper idea! I have to think of a way to use red peppers. Sarah would love that!
